Cook the Noodles

Bring a large pot of water to a boil. Add the Lo Mein noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop cooking. Set aside.

Prepare the Protein

If using chicken, slice the chicken breast into thin strips. For shrimp, ensure they are peeled and deveined. Season both with salt and pepper.

Chop the Vegetables

Thinly slice the bell pepper and carrot. Chop the broccoli into small florets and chop the green onions, keeping the white and green parts separate.

Make the Sauce

In a small bowl, mix together soy sauce, oyster sauce, sesame oil, cornstarch, and water. Stir until the cornstarch is fully dissolved.

Mince Garlic and Ginger

Finely mince the garlic cloves and ginger.

Stir-Fry the Protein

In a large skillet or wok, heat 1 tablespoon of oil over medium-high heat. Add the protein (chicken or shrimp) and stir-fry until fully cooked, about 5-7 minutes for chicken and 3-4 minutes for shrimp. Remove from the skillet and set aside.

Stir-Fry the Vegetables

In the same skillet, add a little more oil if needed. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant. Add the sliced bell pepper, carrots, and broccoli. Stir-fry for about 3-4 minutes until slightly tender.

Combine Everything

Return the cooked protein to the skillet with the vegetables. Add the cooked Lo Mein noodles. Pour the sauce over the mixture and toss everything together until well coated and heated through, about 2-3 minutes.

Finish and Serve

Add the chopped green onions (green parts) and toss again. Adjust seasoning with salt and black pepper to taste. Serve hot.
