Marinade Preparation
Prepare Lemongrass
Trim the lemongrass stalks and remove the tough outer layers. Chop the tender part into small pieces.
Blend Marinade Ingredients
In a blender, combine the chopped lemongrass, garlic cloves (peeled), ginger, soy sauce, brown sugar, lime juice, sesame oil, salt, and black pepper. Blend until smooth.

Place the boneless chicken thighs in a large resealable plastic bag or bowl. Pour the marinade over the chicken, ensuring all pieces are coated. Seal the bag or cover the bowl and refrigerate for at least 1 hour, preferably overnight for maximum flavor.
Grilling Chicken
Preheat Grill
Preheat your grill to medium-high heat.
Grill Chicken
Remove the chicken from the marinade and discard the marinade. Place the chicken on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
Rest Chicken
Once cooked, remove the chicken from the grill and let it rest for 5 minutes before slicing.
