Prepare Thai Tea

Boil Water
In a medium saucepan, bring 4 cups of water to a rolling boil.

Steep Tea
Once the water is boiling, remove the saucepan from heat and add 4 tablespoons of Thai tea leaves. Let it steep for about 15 minutes.

Strain Tea
After steeping, strain the tea through a fine mesh strainer into a heatproof pitcher or bowl, discarding the tea leaves.

Sweeten Tea
Add 1 tablespoon of sugar to the hot tea and stir until fully dissolved. Allow the tea to cool to room temperature.
Assemble Iced Thai Tea

Prepare Glass
Fill a tall glass with 1 cup of ice cubes.

Pour Tea
Pour the cooled Thai tea over the ice, filling the glass about 3/4 full.

Add Half-and-Half
Top off the drink with 1/4 cup of half-and-half, adjusting to taste.

Garnish and Serve
Optionally, garnish with a sprig of mint or a slice of lime. Serve immediately with a straw.
