Prepare the Ingredients
Wash the cucumber and slice it thinly into rounds. Rinse the watercress and pat it dry. Chop the fresh dill finely.

Toast the Bread
Lightly toast the slices of sourdough bread until golden brown for added texture and flavor.

Spread the Creme Fraiche
On one side of each slice of toasted sourdough, spread an even layer of creme fraiche.

Layer the Filling
On half of the slices, layer smoked salmon, followed by the cucumber slices, a handful of watercress, and a sprinkle of chopped dill.

Top and Finish
Place the remaining slices of bread on top of the filled slices, creme fraiche side down, to create sandwiches. Press gently to hold together.

Cut and Serve
Cut each sandwich into quarters or halves as desired. Arrange them on a platter and serve immediately.
