Calzone Preparation

    Make the Dough

    In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy. Add olive oil, salt, and flour gradually, mixing until a dough forms. Knead for about 5 minutes until smooth. Cover and let rise for 1 hour.

    Prepare the Filling

    In a skillet, heat a little olive oil over medium heat. Add garlic, mushrooms, and spinach. Sauté until mushrooms are cooked and spinach is wilted. Remove from heat and mix in Daiya cheese and vegan ricotta.

    Make the Marinara Sauce

    In a saucepan, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Add crushed tomatoes, basil, salt, and pepper. Simmer for 15 minutes.

    Assemble the Calzone

    Preheat oven to 425°F (220°C). Roll out the dough on a floured surface to about 1/4 inch thick. Cut into circles. Place filling on one half of each circle, fold over, and seal edges with a fork.

    Bake the Calzones

    Place calzones on a baking sheet lined with parchment paper. Bake in preheated oven for 15-20 minutes or until golden brown.

    Serve calzones hot with marinara sauce on the side for dipping.
