Prepare the Spinach
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the organic fresh spinach and cook until wilted, about 3-4 minutes. Season with salt and black pepper. Remove from heat and set aside.

Prepare the Tomatoes
While the spinach is cooking, chop the plum tomatoes into small pieces and set aside.

Prepare the Garlic
Mince the fresh garlic cloves and add them to the skillet with the remaining tablespoon of olive oil. Sauté for about 1 minute until fragrant, then combine with the spinach.

Preheat the Oven
Preheat your oven to 475°F (245°C).

Assemble the Pizza
Roll out the pizza dough on a floured surface to your desired thickness. Transfer it to a pizza stone or baking sheet. Spread the spinach and garlic mixture evenly over the dough, then top with chopped plum tomatoes and sprinkle the shredded mozzarella cheese on top.

Bake the Pizza
Bake in the preheated oven for 12-15 minutes or until the crust is golden brown and the cheese is bubbly.

Remove from the oven, let cool for a few minutes, slice, and serve warm.
