Prepare the Dough
In a large bowl, combine warm water, sugar, and yeast. Let it sit for about 5 minutes until frothy. Add salt and olive oil, then gradually mix in the flour until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Knots
Preheat the oven to 400°F (200°C). Once the dough has risen, punch it down and divide it into 12 equal pieces. Roll each piece into a rope about 8 inches long, then tie into a knot and tuck the ends underneath.

Bake the Knots
Place the knots on a baking sheet lined with parchment paper. Brush with melted butter and sprinkle with minced garlic and chopped parsley. Bake for 15-20 minutes or until golden brown.

Remove from the oven and let cool slightly. Serve warm with marinara sauce on the side.
