Calzone Preparation

Make the Dough
In a large bowl, combine warm water and yeast. Let it sit for about 5 minutes until frothy. Add olive oil, salt, and flour to the mixture, and knead until smooth. Cover the bowl with a towel and let it rise for 1 hour.

Prepare the Filling
In a mixing bowl, combine whole milk mozzarella, ricotta cheese, Italian seasoning, and black pepper. Mix well until combined.

Shape the Calzones
Preheat the oven to 475°F (245°C). Once the dough has risen, punch it down and divide it into 4 equal pieces. Roll each piece into a circle. Place a generous amount of the cheese filling on one half of each circle and fold the other half over, sealing the edges by crimping with a fork.

Bake the Calzones
Place the calzones on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes or until golden brown.

Serve
Remove from the oven and let them cool for a few minutes. Serve warm with marinara sauce on the side.
