Prepare the Milk
In a large pot, heat the milk and heavy cream over medium heat until it reaches about 85°F (29°C). Stir gently to combine.

Add Vinegar
Remove the pot from heat and stir in the white vinegar. Let it sit for about 5 minutes to allow the curds to form.

Add Culture and Rennet
Sprinkle the blue cheese culture over the curds and gently stir in the rennet. Cover the pot and let it sit undisturbed for about 1 hour.

Cut the Curds
Once the curds have set, cut them into small cubes using a knife. Let the curds rest for about 10 minutes.

Cook the Curds
Slowly heat the curds to about 105°F (40°C), stirring gently to allow them to release whey. Maintain this temperature for about 30 minutes.

Drain the Curds
Pour the curds into a cheesecloth-lined colander to drain the whey. Gather the cheesecloth and press gently to remove more whey.

Add Salt and Mold
Transfer the curds to a bowl and add salt to taste. Mix well. Then, pack the curds into a cheese mold.

Aging the Cheese
Leave the cheese to age in a cool, humid environment for at least 2 to 4 weeks, turning it every few days. The longer it ages, the stronger the flavor.
