Cooking Instructions

  1. 1

    Cook the Bacon

In a large pot, cook the chopped bacon over medium heat until crispy. Remove and set aside, leaving the bacon fat in the pot.

  2. 2

    Sauté Vegetables

In the same pot, add the butter, onion, and celery. Sauté until the onion is translucent, about 5 minutes.

  3. 3

    Add Flour

Sprinkle the flour over the sautéed vegetables and stir to coat. Cook for another 2 minutes.

  4. 4

    Add Liquid Ingredients

Gradually add the milk and heavy cream, stirring constantly to prevent lumps. Bring to a simmer.

  5. 5

    Add Potatoes and Seasonings

Add the diced potatoes, clams, thyme, bay leaf, salt, and black pepper. Cook until the potatoes are tender, about 15-20 minutes.

  6. 6

    Finish and Serve

Remove the bay leaf and stir in the cooked bacon. Adjust seasoning if necessary. Serve hot in cups or bowls.
