Prepare the Dough
In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy. Add flour, salt, and olive oil. Mix until a dough forms.

Knead the Dough
Transfer the dough to a floured surface and knead for about 10 minutes until smooth and elastic.

First Rise
Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

Shape the Bagels
Punch down the dough and divide it into 12 equal pieces. Roll each piece into a ball and then poke a hole in the center to form a bagel shape.

Second Rise
Place the shaped bagels on a baking sheet lined with parchment paper. Cover and let rise for an additional 20-30 minutes.

Boil the Bagels
Preheat your oven to 425°F (220°C). In a large pot, bring water to a boil. Boil the bagels for about 1-2 minutes on each side.

Transfer the boiled bagels back to the baking sheet, sprinkle with toppings of choice, and bake for 20-25 minutes or until golden brown.
