Cooking Instructions

  1. 1

    Prepare the Pomegranate Gastrique

In a saucepan, combine the pomegranate juice and sugar. Bring to a simmer over medium heat and reduce until thickened and syrupy, about 15-20 minutes. Set aside.

  2. 2

    Cook the Dirty Rice

Prepare the dirty rice according to package instructions or your preferred recipe. Set aside.

  3. 3

    Sear the Venison

Season the venison steak with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear the venison for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the skillet and let rest.

  4. 4

    Cook the Foie Gras

In the same skillet, add the foie gras slices and cook for about 1-2 minutes on each side until browned and crispy. Remove and set aside.

  5. 5

    Plate the Dish

On each plate, place a serving of dirty rice, top with sliced venison, and garnish with crispy foie gras. Drizzle with pomegranate gastrique and sprinkle with chopped scallions.
