Prepare the Fried Green Tomatoes

Slice the green tomatoes into 1/4 inch thick slices. Set up a breading station with three shallow dishes: one with flour seasoned with salt and pepper, one with beaten eggs, and one with panko breadcrumbs.

Bread the Tomatoes

Dredge each tomato slice in flour, dip in the egg, and then coat with panko breadcrumbs. Set aside on a plate.

Fry the Tomatoes

Heat oil in a large skillet over medium-high heat. Once hot, fry the breaded tomato slices until golden brown on both sides, about 3-4 minutes per side. Drain on paper towels.

Make the Roasted Red Pepper Coulis

In a blender, combine roasted red peppers, garlic, olive oil, balsamic vinegar, salt, and black pepper. Blend until smooth and adjust seasoning to taste.

Prepare the Stone-Ground Goat Cheese Grits

In a saucepan, bring water to a boil and add salt. Slowly whisk in the stone-ground grits. Reduce heat and cook, stirring frequently, until thickened, about 20-25 minutes. Stir in goat cheese and butter until melted and creamy.
