Marinate the Chicken
In a large bowl, soak the bone-in chicken pieces in buttermilk for at least 2 hours or overnight in the refrigerator for best results.

Prepare the Coating
In a separate bowl, mix together the flour, cornstarch, salt, black pepper, garlic powder, paprika, and cayenne pepper.

Coat the Chicken
Remove the chicken from the buttermilk and let the excess drip off. Dredge each piece in the flour mixture, ensuring an even coating. Shake off any excess flour.

Fry the Chicken
Carefully add the coated chicken pieces to the hot oil, frying in batches if necessary. Cook for about 12-15 minutes, turning occasionally, until golden brown and cooked through (internal temperature should reach 165°F or 74°C).

Glaze with Sorghum Syrup
Once the chicken is cooked, remove it from the oil and drain on paper towels. Brush or drizzle the hot fried chicken with sorghum syrup for a sweet glaze.
