Preheat your oven to 400°F (200°C). Pat the chicken dry with paper towels and season generously with salt.

Make the Glaze
In a bowl, mix together sorghum syrup, black pepper, garlic powder, onion powder, and olive oil to create a glaze.

Coat the Chicken
Brush the sorghum glaze over the chicken, ensuring it's evenly coated.

Bake the Chicken
Place the chicken in a roasting pan and bake in the preheated oven for 45-60 minutes, or until the internal temperature reaches 165°F (75°C). Baste with additional glaze halfway through cooking.

Prepare the Topping
While the chicken is baking, prepare the popped sorghum and chop the chives.

Serve
Once the chicken is cooked, remove it from the oven and let it rest for 5-10 minutes. Serve topped with popped sorghum and chives. Accompany with your choice of a fresh farm side.
