Method
Prepare the Pancake Batter

Mix Ingredients
In a large bowl, combine mashed sweet potatoes, flour, baking powder, sugar, and salt. In another bowl, whisk together eggs, buttermilk, vanilla, and melted butter. Combine the wet and dry ingredients until just mixed.

Cook Pancakes
Heat a skillet over medium heat and lightly grease. Pour 1/4 cup of batter for each pancake and cook until bubbles form on the surface. Flip and cook until golden brown.
Fry the Chicken

Marinate Chicken
Soak chicken thighs in buttermilk for at least 30 minutes.

Prepare Apple Cider Bacon

Cook Bacon
In a skillet, cook bacon until crispy. Remove and drain excess fat.

Glaze Bacon
Add apple cider and brown sugar to the skillet, simmering until thickened. Add bacon back to the skillet and coat with the glaze.
Make Spiced Pecans

Prepare Pickling Liquid
In a saucepan, combine blueberries, apple cider vinegar, and sugar. Bring to a simmer and cook for about 5 minutes.
