Prepare Pork Belly
Rub the pork belly with brown sugar, paprika, garlic powder, onion powder, and salt. Let it cure in the fridge for at least 4 hours or overnight.

Cook Pork Belly
Preheat oven to 300°F (150°C). Place the pork belly in a baking dish and cover with foil. Bake for 2-3 hours until tender. Remove foil and broil for 5-10 minutes until crispy.

Make Sassafras Sauce
In a small saucepan, combine sassafras leaves, honey, apple cider vinegar, olive oil, salt, and black pepper. Simmer over low heat for 10 minutes, then strain and set aside.

Fry Grit Cakes
Heat vegetable oil in a skillet. Fry grit cakes until golden brown on both sides. Drain on paper towels.

Grill Pork Chop
Season the pork chop with salt and black pepper. Grill over medium-high heat for 6-7 minutes per side, or until cooked through.
