    Prepare Pork Belly

    Rub the pork belly with brown sugar, paprika, garlic powder, onion powder, and salt. Let it cure in the fridge for at least 4 hours or overnight.

    Cook Pork Belly

    Preheat oven to 300°F (150°C). Place the pork belly in a baking dish and cover with foil. Bake for 2-3 hours until tender. Remove foil and broil for 5-10 minutes until crispy.

    Make Sassafras Sauce

    In a small saucepan, combine sassafras leaves, honey, apple cider vinegar, olive oil, salt, and black pepper. Simmer over low heat for 10 minutes, then strain and set aside.

    Prepare Grits

    In a pot, bring water to a boil. Add grits and reduce heat to low. Stir frequently until thickened (about 20 minutes). Stir in butter, sage, and egg. Spread into a greased pan and let cool. Cut into cakes.

    Fry Grit Cakes

    Heat vegetable oil in a skillet. Fry grit cakes until golden brown on both sides. Drain on paper towels.

    Grill Pork Chop

    Season the pork chop with salt and black pepper. Grill over medium-high heat for 6-7 minutes per side, or until cooked through.

    Prepare Green Beans

    In a skillet, melt butter and sauté green beans until tender. Add fresh basil, salt, and pepper.
