Preparation

    Prepare the Potatoes

    Wash and cube the potatoes. Boil them in salted water for about 10 minutes until tender, then drain.

    Crisp the Potatoes

    In a skillet, heat olive oil over medium heat. Add the boiled potatoes, rosemary, and parmesan cheese. Cook until crispy and golden, about 8-10 minutes.

    Cook the Bacon

    In a separate pan, cook the apple cider bacon until crispy. Remove from pan and chop into pieces.

    Cook the Eggs

    In the same pan used for bacon, crack the eggs and cook sunny-side up to your preferred doneness.

Prepare the Grits

    Cook the Grits

    In a pot, bring water to a boil. Add the grits and salt, reduce heat, and simmer for about 20-25 minutes, stirring occasionally.

    Add Goat Cheese

    Once the grits are thick and creamy, stir in the goat cheese until melted and smooth.

    In a bowl, layer the goat cheese grits, followed by the crispy potatoes, sunny-side up eggs, chopped bacon, and top with green tomato salsa and red pepper sauce.
