    Prepare the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in the heirloom grits and a pinch of salt. Reduce heat to low and simmer, stirring occasionally, until thickened, about 20-25 minutes. Stir in goat cheese until melted and creamy.

    Slice and Bread the Tomatoes

    Slice the green tomatoes into 1/4 inch thick slices. Set up a breading station with three bowls: one with flour mixed with salt and pepper, one with beaten eggs, and one with panko breadcrumbs.

    Fry the Tomatoes

    Dip each tomato slice first in the flour, then in the egg, and finally coat with panko breadcrumbs. In a large skillet, heat vegetable oil over medium heat. Fry the breaded tomato slices in batches until golden brown, about 3-4 minutes per side. Drain on paper towels.

    Serve

    On each plate, place a serving of heirloom grits, top with fried green tomatoes, and drizzle with roasted red pepper sauce. Garnish with fresh basil.
