Prepare the Tomatoes
Slice the green tomatoes into 1/4-inch thick slices. In a shallow dish, mix the flour, cornmeal, salt, and black pepper.

Batter the Tomatoes
In another bowl, whisk the eggs and buttermilk together. Dip each tomato slice into the egg mixture, then dredge in the flour-cornmeal mixture, ensuring they are evenly coated.

Fry the Tomatoes
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the battered tomato slices and fry until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.

Assemble the Sandwich
Toast the bread slices lightly. On each slice, layer fried green tomatoes, torn burrata cheese, and fresh basil leaves. Drizzle with balsamic glaze.
