    Prepare the Potatoes or Grits

    If you choose crispy potatoes, wash and chop them into small cubes. Toss with olive oil, salt, pepper, and rosemary. Roast in the oven at 400°F (200°C) for 25-30 minutes until crispy. For goat cheese grits, cook grits according to package instructions, adding goat cheese, salt, and pepper to taste.

    Cook the Eggs

    In a skillet, melt butter over medium heat. Crack the eggs into the skillet and cook to your desired doneness (scrambled, sunny-side up, or over-easy). Season with salt and pepper.

    Cook the Sausage or Bacon

    In another skillet, cook the choice of sausage (chorizo, country sausage, or soy-sage) according to package instructions until browned and cooked through. If using bacon, cook until crispy.

    Toast the Texas Toast

    Toast the slice of Texas toast in a toaster or on a skillet until golden brown.

    Assemble the Platter

    On a large plate, arrange the eggs, crispy potatoes or grits, cooked sausage or bacon, and the toasted Texas toast. Serve immediately.
