Prepare the Pork

Preheat your oven to 300°F (150°C). Rub the pork shoulder with salt and black pepper. In a large cast iron skillet, heat the duck fat over medium heat. Once hot, sear the pork on all sides until golden brown, about 3-4 minutes per side.

Slow Cook

Once seared, cover the skillet with a lid or aluminum foil and transfer it to the oven. Cook for 4-5 hours, or until the pork is tender and easily pulls apart with a fork.

Prepare the Glaze

In a small bowl, mix together the sriracha sauce and honey. Set aside.

Pickle the Onions

Slice the red onion thinly and place it in a bowl. Pour boiling water over the onion, let it sit for 10 minutes, then drain. Mix with a pinch of salt and set aside to cool.

Finish the Dish

Once the pork is cooked, remove it from the oven and brush the sriracha honey glaze over the top. Let it rest for 10 minutes before shredding the meat.

Serve

Serve the pulled pork topped with pickled red onions and chopped cilantro. Pair with your choice of two farm-fresh sides.
