    Prepare the Sausage

    In a large pot over medium heat, add olive oil. Once heated, slice the andouille and chorizo sausages into bite-sized pieces and add to the pot. Cook until browned, about 5-7 minutes.

    Sauté the Vegetables

    Add chopped onion, green bell pepper, and celery to the pot. Sauté for about 5 minutes until the vegetables are softened. Stir in minced garlic and cook for an additional minute.

    Add Liquids and Seasoning

    Pour in the chicken broth and beer, followed by diced tomatoes, okra (if using), bay leaves, Cajun seasoning, salt, and black pepper. Stir to combine.

    Simmer the Gumbo

    Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for 30 minutes, stirring occasionally.

    Serve

    Remove bay leaves before serving. Serve the gumbo over cooked rice and enjoy!
