Prepare the Beef
Season the chuck roast with salt and black pepper on all sides.

Sear the Roast
In a large skillet, heat the vegetable oil over medium-high heat. Add the seasoned roast and sear for about 4-5 minutes on each side until browned. Remove from the skillet and set aside.

Combine Ingredients
In a slow cooker, combine the sautéed onions and garlic, chipotle peppers, cumin, oregano, bay leaves, beef broth, and lime juice. Stir well.

Add Beef to Slow Cooker
Place the seared chuck roast into the slow cooker, making sure it is submerged in the liquid. Cover with the lid.

Cook
Cook on low for 8 hours or until the beef is fork-tender.

Shred the Beef
Once cooked, remove the beef from the slow cooker and shred it with two forks. Return the shredded beef to the slow cooker and let it soak in the juices for an additional 30 minutes.

Serve
Serve the beef barbacoa in tacos, burritos, or over rice, garnished with fresh cilantro and lime wedges if desired.
