    Prepare the Collards

    Rinse the collard greens thoroughly under cold water. Remove the tough stems and chop the leaves into bite-sized pieces.

    Cook the Bacon

    In a large pot or Dutch oven, cook the bacon over medium heat until crispy. Remove the bacon and set aside, leaving the drippings in the pot.

    Sauté Onion and Garlic

    Add the chopped onion to the pot and sauté for about 5 minutes until translucent. Add minced garlic and cook for an additional 1-2 minutes until fragrant.

    Add Collards and Broth

    Add the chopped collard greens to the pot along with the chicken broth. Stir to combine and bring to a simmer.

    Season and Simmer

    Add apple cider vinegar, red pepper flakes, salt, and black pepper. Crumble the cooked bacon and add it back to the pot. Cover and simmer for about 30-40 minutes until the collards are tender.

    Serve

    Taste and adjust seasoning if needed. Serve warm as a side dish.
