Prepare the Creole Butter
In a small saucepan over low heat, combine the unsalted butter, minced garlic, and lemon juice. Stir until the butter is melted and the garlic is fragrant. Remove from heat and stir in the chopped parsley. Set aside.

Season the Mahi-Mahi
Pat the mahi-mahi fillets dry with paper towels. Generously coat both sides of each fillet with Creole seasoning.

Cook the Mahi-Mahi
In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned mahi-mahi fillets and cook for about 3-4 minutes on each side, or until the fish is cooked through and has a blackened crust.

Serve
Remove the fillets from the skillet and place on serving plates. Drizzle the prepared Creole butter over the top and serve immediately.
