Prepare the Ingredients
Chop the chicken breast into bite-sized pieces. Slice the bok choy, banana pepper, red bell pepper, and onion thinly. Chop the scallions and set aside.

Cook the Chicken
In a large skillet over medium heat, add a tablespoon of oil. Once hot, add the chicken pieces and cook until golden brown and cooked through, about 5-7 minutes. Remove from skillet and set aside.

Sauté the Vegetables
In the same skillet, add another tablespoon of oil if needed. Add the onion, banana pepper, and red bell pepper, and sauté for about 3-4 minutes until softened. Add the bok choy and continue to sauté for another 2 minutes.

Combine Ingredients
Return the cooked chicken to the skillet with the vegetables. Add the cashews and toss everything together. Squeeze the juice of the lime over the mixture and stir well. Season with salt and pepper to taste.

Garnish and Serve
Garnish with chopped scallions and serve hot.
