Shrimp Tempura
Prepare the batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, and salt. Gradually whisk in the ice-cold water until just mixed (do not overmix).
Heat the oil
In a deep pot or frying pan, heat the vegetable oil to 350°F (175°C).
Fry the shrimp
Dip each shrimp into the batter, allowing excess to drip off, then carefully place them in the hot oil. Fry in batches for about 2-3 minutes or until golden brown. Remove and drain on paper towels.
Edamame
Cook the edamame
Bring a pot of salted water to a boil. Add the edamame pods and cook for 5-7 minutes until tender. Drain and sprinkle with additional salt.
Pink Sauce
Make the pink sauce
In a small bowl, mix together mayonnaise, ketchup, Sriracha sauce, and lemon juice until well combined.
