Method

Preparation

  1. 1

    Grill the Turkey

Preheat your grill or grill pan over medium heat. Season the turkey breast with salt and pepper to taste. Grill the turkey for about 6-7 minutes on each side, or until it’s cooked through and reaches an internal temperature of 165°F (75°C). Remove from the grill and let it rest for a few minutes before slicing it thinly.

  2. 2

    Prepare the Stuffing

If using pre-made cornbread stuffing, warm it according to package instructions. If making from scratch, prepare the cornbread stuffing as per your recipe or package directions.

  3. 3

    Toast the Bread

While the turkey is resting, toast the cranberry ciabatta slices on the grill or in a toaster until golden brown.

Assembly

  1. 4

    Assemble the Sandwich

Spread mayonnaise on one side of each slice of toasted cranberry ciabatta. Layer the grilled turkey slices evenly over one slice, followed by the melted Swiss cheese. Add the warmed cornbread stuffing and drizzle cranberry sauce on top. Close the sandwich with the other slice of ciabatta.

  2. 5

    Serve the Sandwich

Cut the sandwich in half and serve it with a side of chips or an apple and a pickle. If desired, you can substitute with a cup of chili, soup, or mac & cheese for an additional charge, or add a side of local greens.
