Prepare House Potatoes

Roast Potatoes
In a large bowl, toss the boiled potatoes with olive oil, salt, black pepper, and garlic powder. Spread them out on a baking sheet and roast in a preheated oven at 425°F (220°C) for 20-25 minutes until golden brown and crispy.

Chop Vegetables
Finely chop the red onion, bell pepper, and Roma tomatoes. Set aside.

Prepare the Sauce
In a heatproof bowl, whisk together the egg yolks and lemon juice. Place the bowl over a pot of simmering water (double boiler). Slowly drizzle in melted unsalted butter while continuously whisking until the sauce thickens. Season with salt to taste.

In a large bowl, layer the roasted house potatoes, followed by the sautéed vegetable topping. Next, add a generous scoop of smashed avocado on top.
