Method
Egg Mixture Preparation
Scramble the Eggs
In a bowl, whisk together the local eggs until well combined. Heat a non-stick skillet over medium heat and add the whisked eggs. Stir gently until they start to set.
Add Other Ingredients
Once the eggs are partially cooked, add the sharp cheddar cheese, caramelized onions, fresh spinach, and sliced kielbasa. Continue to cook, stirring gently until the eggs are fully cooked and the cheese has melted.

Prepare the Potatoes
Peel and dice the potatoes into small cubes. In a large skillet, heat the olive oil over medium-high heat.
Queso Chipotle Hollandaise Preparation
Make the Hollandaise
In a heatproof bowl, whisk together the egg yolks and lime juice. Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens.
Incorporate the Butter
Slowly drizzle in the melted butter while whisking until the hollandaise sauce is smooth and creamy. Stir in the chipotle in adobo sauce and season with salt to taste.
