Two local eggs scrambled with pulled pork grilled with local salsa, black beans, corn & poblano blend (corn, poblano peppers, onions), and sharp cheddar over house potatoes. Topped with smashed avocado, cilantro pesto, and queso chipotle hollandaise. Served with a grilled cornbread round.

Grilled Cornbread

Method

Prepare the Carnitas Bowl Base

    Cook the House Potatoes

    Boil the house potatoes in salted water until fork-tender. Drain and let cool slightly, then cut into cubes and set aside.

    Sauté the Vegetables

    Dice the poblano peppers and onion. In a skillet over medium heat, add a little oil and sauté the poblano and onion until softened, about 5-7 minutes.

    Prepare the Black Beans and Corn

    In a separate pot, heat the black beans and corn together over medium heat until warmed through, about 5 minutes. Set aside.

    Scramble the Eggs

    In a bowl, whisk the eggs. In the same skillet used for the vegetables, add a bit more oil if needed and pour in the eggs. Scramble until just set, about 3-4 minutes.

    Combine the Base Ingredients

    In a large bowl or directly in the skillet, combine the scrambled eggs, pulled pork, sautéed vegetables, black beans, and corn. Mix well.

    Add Cheese

    Sprinkle the sharp cheddar cheese over the mixture and let it melt slightly, about 2 minutes.

Prepare Toppings

    Prepare Avocado

    Cut the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it with a fork and season with salt to taste.

    Prepare Cilantro Pesto

    If using store-bought cilantro pesto, simply measure out 1 cup. If making homemade, blend fresh cilantro, garlic, nuts, olive oil, and parmesan until smooth.

    Prepare Queso Chipotle Hollandaise

    If using store-bought hollandaise, warm it gently. For homemade, whisk together egg yolks, lemon juice, and melted butter, then stir in chipotle until smooth.

Grill Cornbread

    Make the Cornbread

    Prepare the cornbread mix according to the package instructions, adding water as needed. Pour into a greased skillet.

    Grill the Cornbread

    Cook the cornbread on a medium grill or stovetop until golden brown on both sides, about 5-7 minutes each side.

Assemble the Bowl

    Layer the Ingredients

    In a large bowl or plate, add a generous portion of the carnitas base mixture. Top with a dollop of smashed avocado, cilantro pesto, and drizzle with queso chipotle hollandaise.

    Serve with Cornbread

    Place a grilled cornbread round on the side and serve immediately.
