Preparing Pulled Chicken

Cook the Chicken
In a slow cooker, add the chicken thighs, salt, and black pepper. Cook on low for 6-8 hours or until the chicken is tender and easily shreds with a fork.

Shred the Chicken
Once cooked, remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the slow cooker and mix in the sweet heat sauce. Let it cook on low for an additional 30 minutes.

Prepare the Tomato
Dice the medium tomato into small pieces and set aside.
Assembling the Stack

Build the Stack
On the unbuttered side of a slice of grilled sourdough, layer the pulled chicken, crispy bacon, melted cheddar cheese, diced tomato, and coleslaw. Drizzle with chipotle aioli.

Top and Serve
Place another slice of grilled sourdough on top to complete the sandwich. Repeat for the remaining slices. Cut in half and serve immediately.
