    Peel and dice the sweet potatoes into 1/2-inch cubes.

    In a large skillet, heat olive oil over medium heat. Add the diced sweet potatoes, salt, and black pepper. Cook, stirring occasionally, for about 15-20 minutes or until the sweet potatoes are tender and slightly crispy. Set aside.

    In the same skillet, melt butter over medium heat. Add the diced onion, bell pepper, and sliced mushrooms. Sauté until the vegetables are soft and the onions are translucent, about 5-7 minutes.
