1. Cook Sweet Potatoes and Hash Browns
In a large skillet, heat olive oil over medium heat. Add diced sweet potatoes and cook for about 5-7 minutes until they begin to soften.
2. Add hash browns to the skillet, season with salt and black pepper, and cook for another 8-10 minutes, stirring occasionally, until golden and crispy.

3. Cook Maple Sausage
In a separate pan, cook the North Country maple sausage over medium heat until browned and cooked through, about 5-6 minutes. Break it into small pieces as it cooks.
4. Scramble Eggs
In a bowl, whisk together the local eggs and a pinch of salt. Pour the eggs into the skillet with the cooked sausage, add the chopped spinach, and cook while stirring, until the eggs are scrambled and fully cooked, about 4-5 minutes.
5. Add the shredded sharp cheddar cheese to the egg mixture and stir until melted. Remove from heat.
