Sweet Potatoes and Hash Browns Preparation

Cook Sweet Potatoes and Hash Browns
In a large skillet, heat olive oil over medium heat. Add diced sweet potatoes and cook for about 5-7 minutes until they begin to soften.

Add hash browns to the skillet, season with salt and black pepper, and cook for another 8-10 minutes, stirring occasionally, until golden and crispy.

Make Hollandaise Sauce
In a small saucepan, melt the butter over low heat. In a separate bowl, beat the egg yolk with lemon juice and a pinch of salt.

Serve the Skillet
On a plate, layer the sweet potato and hash brown mixture as the base. Top with the scrambled egg and sausage mixture.
