Prepare the Potatoes
Wash the house potatoes thoroughly. Dice them into bite-sized cubes and place them in a large bowl. Add olive oil, salt, and black pepper, and mix well to coat evenly.

Cook the Bacon
In a large skillet over medium heat, cook the hardwood smoked bacon until crispy. Remove the bacon from the skillet and place it on a paper towel to drain excess fat. Once cooled, chop into small bits.

Bake the Potatoes
Preheat your oven to 400°F (200°C). Spread the seasoned diced potatoes onto a baking sheet in a single layer. Bake for 25-30 minutes, or until golden brown and crispy, stirring halfway through.

Combine Ingredients
Once the potatoes are done baking, remove them from the oven and transfer them to a large serving dish. Add the sautéed onions and peppers, and the chopped bacon bits. Gently toss until combined.

Add Cheese
Sprinkle the sharp cheddar cheese evenly over the top of the loaded potatoes. Return to the oven for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Serve Hot
Remove the Loaded House Potatoes from the oven and let cool for a minute. Serve hot, garnished with additional bacon bits or chopped green onions if desired.
