Preparation

    Mix Dry Ingredients

    In a large mixing bowl, whisk together the all-purpose flour, sugar, baking powder, baking soda, and a pinch of salt until well combined.

    Combine Wet Ingredients

    In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

    Combine Mixtures

    Pour the wet ingredients into the dry ingredients. Stir until just combined; do not overmix. The batter should be slightly lumpy.

Cooking

    Preheat the Pan

    Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

    Pour about 1/4 cup of batter onto the hot skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.
