    Melt the Butter

    In a small saucepan over low heat, melt the unsalted butter until it is completely liquid. Remove from heat and let it cool slightly.

    Whisk Egg Yolks

    In a heatproof bowl, whisk together the egg yolks and fresh lemon juice until the mixture is pale and thickened.

    Prepare Double Boiler

    Fill a saucepan with a couple of inches of water and bring it to a simmer. Place the bowl with the egg yolk mixture over the saucepan, making sure the bowl does not touch the water.

    Emulsify

    Whisk the egg yolk mixture constantly while slowly drizzling in the melted butter. Start with just a few drops at first, then gradually increase the amount as the sauce begins to thicken.

    Once all the butter has been incorporated and the sauce is thick and creamy, remove the bowl from the heat. Stir in the salt and a pinch of cayenne pepper, adjusting the seasoning to taste.

    Serve the hollandaise sauce immediately over poached eggs, vegetables, or your favorite breakfast dish.
