Preparation

  1. 1

    Prepare the Vegetables

Chop the onion, bell pepper, carrot, and celery into small pieces. Mince the garlic cloves.

  2. 2

    Rinse the Beans

Open the canned kidney beans and black beans, then rinse them under cold water in a colander.

Cooking

  1. 3

    Sauté the Vegetables

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onions, bell pepper, carrot, and celery. Sauté for about 5-7 minutes until the vegetables are softened.

  2. 4

    Brown the Beef

Add the grass-fed ground beef to the pot. Cook until browned, breaking it up with a wooden spoon, about 8-10 minutes.

  3. 5

    Add Garlic and Spices

Stir in the minced garlic, chili powder, ground cumin, smoked paprika, salt, black pepper, and red pepper flakes. Cook for another 2 minutes until fragrant.

  4. 6

    Combine Remaining Ingredients

Add the canned diced tomatoes (with juices), kidney beans, black beans, and beef broth to the pot. Stir well to combine.

  5. 7

    Simmer the Chili

Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for 30-40 minutes, stirring occasionally.

Serving

  1. 8

    Serve Hot

Taste the chili and adjust seasoning if necessary. Serve hot in bowls with your favorite toppings like cheese, sour cream, or cilantro.
