Preparation of Beans

    Soak the Beans

    Rinse the dried navy beans under cold water and remove any debris. Place the beans in a large bowl and cover them with 8 cups of water. Soak the beans overnight or for at least 8 hours.

    Cook the Beans

    Drain and rinse the soaked beans. In a large pot, combine the beans with fresh water (enough to cover the beans by 2 inches). Bring to a boil, then reduce the heat and simmer for about 1 hour until the beans are tender. Drain and set aside.

Baking the Beans

    Preheat Oven

    Preheat your oven to 350°F (175°C).

    Cook Bacon and Onion

    In a skillet over medium heat, cook the bacon slices until crispy. Remove bacon, crumble it, and set aside. In the same skillet, add the chopped onion and sauté until translucent, about 5 minutes.

    Combine Ingredients

    In a large mixing bowl, combine the cooked beans, crumbled bacon, sautéed onion, brown sugar, ketchup, molasses, Dijon mustard, salt, black pepper, garlic powder, and smoked paprika. Mix until well incorporated.

    Transfer to Baking Dish

    Transfer the mixture to a greased 9x13 inch baking dish, spreading it out evenly.

    Cover the dish with foil and bake in the preheated oven for 1 hour. Remove the foil and bake for an additional 30 minutes, or until the beans are bubbly and the top is slightly caramelized.

    Once the baked beans are done, remove from the oven and let them cool for a few minutes. Garnish with chopped parsley and crumbled feta cheese if desired. Serve warm.
