    Prepare the Baked Clams Oreganato

    Preheat the oven to 375°F (190°C). In a bowl, combine breadcrumbs, minced garlic, parsley, olive oil, oregano, salt, and pepper. Mix well. Place each clam on a baking sheet and top with the breadcrumb mixture. Bake for 15-20 minutes until golden brown.

    Cook the Sauteed Mussels Oreganata

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the mussels and cover. Cook for about 5-7 minutes or until the mussels open. Stir in some breadcrumbs, garlic, and parsley, then cover and cook for an additional 2-3 minutes. Remove from heat.

    Prepare the Fried Mozzarella

    Heat oil in a deep fryer or large pot. Dredge mozzarella slices in flour, dip in beaten egg, and then coat in breadcrumbs. Fry until golden brown, about 2-3 minutes. Remove and drain on paper towels.

    Make the Eggplant Rollatini

    Grill or bake eggplant slices until tender. Spread a layer of ricotta cheese on each slice, roll them up, and place seam-side down in a baking dish. Top with marinara sauce and sprinkle with Parmesan cheese. Bake at 375°F (190°C) for about 25 minutes.

    Serve the Antipasto

    Arrange the baked clams, mussels, fried mozzarella, and eggplant rollatini on a large platter. Garnish with additional parsley if desired. Serve warm.
