Cook the Bacon
In a skillet over medium heat, cook the diced bacon until crispy. Remove from heat and set aside, reserving the bacon drippings.
Prepare the Dressing
In the skillet with the reserved bacon drippings, add red wine vinegar, sugar, salt, and pepper. Whisk together over low heat until combined.
Combine Salad Ingredients
In a large bowl, combine the fresh spinach leaves and sliced mushrooms.
