    Make the Dough

    In a large bowl, combine warm water, yeast, and a pinch of sugar. Let it sit for about 5 minutes until frothy. Add olive oil, salt, and flour gradually, mixing until a dough forms. Knead on a floured surface for about 10 minutes until smooth. Place in a greased bowl, cover, and let it rise in a warm place for 1 hour.

    Prepare the Eggplant

    While the dough is rising, slice the eggplant and sprinkle with salt. Let it sit for 30 minutes to draw out excess moisture. Rinse and pat dry, then sauté in olive oil until golden brown.

    Preheat the Oven

    Preheat your oven to 475°F (245°C) with a pizza stone or baking sheet inside.

    Assemble the Pizza

    Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness. Transfer to a pizza peel or parchment paper. Spread tomato sauce evenly over the base, then layer with sautéed eggplant, diced ham, and mozzarella cheese.

    Bake the Pizza

    Carefully transfer the pizza onto the preheated stone or baking sheet. Bake for 12-15 minutes or until the crust is golden and the cheese is bubbly. Remove from the oven and sprinkle fresh basil and black pepper on top.
