Chicken Preparation

Marinate the Chicken
In a bowl, mix the Korean wing sauce, salt, black pepper, garlic powder, and paprika. Add the bone-in chicken thighs and coat them evenly. Cover and marinate in the refrigerator for at least 1 hour or overnight for best flavor.

Cook the Chicken
Preheat your oven to 400°F (200°C). Place the marinated chicken thighs on a baking sheet lined with parchment paper. Bake for 35-40 minutes or until the chicken is cooked through and has an internal temperature of 165°F (74°C).

Make the Batter
In a large bowl, whisk together the all-purpose flour, baking powder, sugar, and salt. In another bowl, beat the eggs and then mix in the milk, melted butter, and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until just combined; do not overmix.

Cook the Waffles
Preheat your waffle iron according to the manufacturer's instructions. Pour the appropriate amount of batter into the waffle iron and cook until golden brown. Repeat with the remaining batter.

Make the Spicy Maple Butter
In a bowl, mix the softened unsalted butter, maple syrup, cayenne pepper, and salt. Adjust the salt and cayenne to taste. Transfer to a serving dish.

Place a waffle on a plate, top it with a baked chicken thigh, and drizzle generously with spicy maple butter.
