Make the Strawberry-Rhubarb Syrup
In a small saucepan, combine 1 cup of sliced strawberries, 1 cup of chopped rhubarb, and 1 cup of sugar with 1 cup of water. Bring to a boil, then reduce heat and simmer for 15-20 minutes. Strain the mixture through a fine mesh sieve and let cool.

In a cocktail shaker filled with ice, add 2 oz of gin, 1 oz of the prepared strawberry-rhubarb syrup, and 0.5 oz of fresh lemon juice. Shake well until the mixture is chilled.

Strain the mixture into a tall glass filled with ice. Top with 4 oz of club soda and stir gently to combine.
