Remoulade Preparation

    Make the Remoulade

    In a medium bowl, combine mayonnaise, Dijon mustard, lemon juice, minced garlic, cayenne pepper, paprika, chopped parsley, salt, and black pepper. Mix well until all ingredients are thoroughly incorporated. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

    Prepare the Catfish

    In a shallow dish, mix cornmeal, all-purpose flour, salt, black pepper, and cayenne pepper. In another bowl, beat the eggs. Dip each catfish fillet first in the egg wash and then dredge in the cornmeal mixture until well coated.

    Fry the Catfish

    In a large frying pan, heat vegetable oil over medium-high heat. Once hot, carefully add the coated catfish fillets. Fry for about 3-4 minutes on each side or until golden brown and cooked through. Remove from the oil and drain on paper towels.

Sandwich Assembly

    Assemble the Po Boy

    Slice the French bread or hoagie rolls in half lengthwise. Spread a generous amount of the prepared remoulade on the bottom half of the bread. Place a few fried catfish fillets on top, followed by shredded lettuce, sliced tomato, and pickles. Drizzle more remoulade on top if desired, then close the sandwich.
