Method

Catfish

    Prepare the Catfish

    Pat the catfish fillets dry with paper towels. Season both sides generously with blackening spice.

    Cook the Catfish

    In a large skillet, heat olive oil over medium-high heat. Once hot, add the seasoned catfish fillets and cook for about 4-5 minutes on each side until blackened and cooked through. Remove from heat and set aside.

Cheddar Grits

    Cook the Grits

    In a medium saucepan, bring 4 cups of water to a boil. Stir in the grits and salt. Reduce heat to low, cover, and simmer for about 20-25 minutes, stirring occasionally.

    Finish the Grits

    Once the grits are thickened and creamy, stir in the butter and cheddar cheese until melted and well combined. Adjust seasoning if necessary.

Tomato Gravy

    Sauté Onions and Garlic

    In a saucepan, heat olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.

    Make the Gravy

    Add the canned diced tomatoes, chicken broth, sugar, salt, black pepper, and basil to the pan. Bring to a simmer and cook for about 10-15 minutes until slightly thickened. Adjust seasoning to taste.

Sweet Thai Chile Brussels Sprouts

    Prepare Brussels Sprouts

    Preheat your oven to 400°F (200°C). In a large bowl, toss the halved brussels sprouts with olive oil and salt.

    Roast Brussels Sprouts

    Spread the brussels sprouts on a baking sheet in a single layer. Roast in the preheated oven for about 20-25 minutes, until they are tender and slightly charred.

    Finish with Sauce

    Remove the brussels sprouts from the oven and drizzle with sweet Thai chili sauce. Toss to coat and return to the oven for an additional 5 minutes.
