Cut the walleye fillets into finger-sized strips and season with salt and black pepper.

In a shallow bowl, beat the eggs. In another shallow bowl, place the almond flour.

Bread the Walleye
Dip each walleye strip first into the egg, then into the almond flour, ensuring they are well-coated.

Heat olive oil in a large skillet over medium heat. Cook the breaded walleye fingers for about 3-4 minutes on each side or until golden brown and cooked through.
