    Prepare the Pork Shank

    Preheat the oven to 325°F (165°C). Season the pork shank generously with salt and black pepper.

    Sear the Pork Shank

    In a large skillet, heat olive oil over medium-high heat. Add the pork shank and sear on all sides until golden brown, about 10 minutes. Remove from skillet and set aside.

    Sauté the Vegetables

    In the same skillet, add chopped onion, carrots, celery, and garlic. Sauté until the vegetables are softened, about 5 minutes.

    Braise the Pork

    Transfer the sautéed vegetables to a roasting pan. Place the seared pork shank on top of the vegetables. Pour in the chicken broth and add thyme and rosemary.

    Cook in the Oven

    Cover the roasting pan with foil and place in the preheated oven. Cook for 2.5 to 3 hours, or until the pork is tender and falling off the bone.

    Make the Demi Glace

    Remove the pork shank from the pan and strain the cooking liquid into a saucepan. Reduce the liquid over medium heat until it thickens into a demi-glace.

    Prepare Mashed Potatoes

    While the pork is cooking, prepare mashed potatoes by boiling peeled and diced potatoes until tender, then mashing with butter, cream, salt, and pepper to taste.

    Serve

    Place a mound of mashed potatoes on a plate, top with the tender pork shank, and drizzle with demi-glace.
