Prepare the Beef Patties
In a large bowl, gently mix the ground beef with salt and black pepper. Divide the mixture into 4 equal portions and shape them into patties, about 1/2 inch thick.

Grill the Burgers
Place the patties on the grill and cook for about 4-5 minutes on one side. Flip the burgers and continue grilling for another 4-5 minutes or until they reach your desired level of doneness.

Add the Bleu Cheese
During the last minute of cooking, top each patty with bleu cheese and close the grill lid to melt the cheese.

Toast the Buns
While the cheese is melting, place the brioche buns on the grill, cut side down, and toast them for about 1-2 minutes until golden brown.

Assemble the Burger
Remove the patties and buns from the grill. Place each burger patty on a toasted bun and top with additional bleu cheese if desired. Serve immediately.
